Ingredients

Pork Belly

  • 1 1/2 pounds pork belly, cut into 1-inch cubes
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 2 teaspoons kosher salt
  • 1 1/2 teaspoons coarse black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chipotle chili powder
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon olive oil

Hot Honey Glaze

  • 1/2 cup hot honey
  • About 4 dashes Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • About 1 tablespoon rendered pork fat from the air fryer basket

Instructions

  1. Cut the pork belly: Cut it into approximately 1-inch cubes. Avoid making the pieces too small or they may dry out before the fat renders.
  2. Season and rest: Add the brown sugar, smoked paprika, kosher salt, black pepper, garlic powder, onion powder, chipotle chili powder, and cayenne. Toss until evenly coated, then rest for 15 minutes.
  3. Add the oil: Drizzle the olive oil over the seasoned pork belly and toss again.
  4. Preheat: Preheat the air fryer to 360°F/182°C.
  5. Render the pork belly: Arrange the cubes in a single layer. Air fry for 30 minutes, shaking the basket thoroughly 2-3 times.
  6. Crisp the edges: Increase the temperature to 400°F/204°C and cook for another 10 minutes, or until the edges are deeply browned and crisp.
  7. Make the glaze: Combine the hot honey, Worcestershire sauce, apple cider vinegar, and about 1 tablespoon of the rendered pork fat.
  8. Glaze: Toss the cooked pork belly in the hot honey mixture until every piece is coated.
  9. Caramelize: Return the pork belly to the air fryer and cook at 400°F for 5 more minutes, until sticky and caramelized.
  10. Cool briefly: Let the burnt ends sit for a couple of minutes before serving. The glaze will thicken as it rests.
