Extra Crispy Air Fryer Frozen Wings

Turn plain frozen chicken wings into golden, extra-crispy wings without thawing. A quick first cook removes the ice, then two simple hacks – drying the wings thoroughly and adding baking powder – help the skin turn blistered and crackly.

Why These Two Crisping Hacks Work

The first 10-minute cook at 360°F thaws the surface and releases the water trapped around frozen wings. Draining the basket and patting every wing completely dry removes that moisture before the high-temperature crisping stage.

A light coating of baking powder raises the skin’s pH and encourages better browning and blistering. The final cook at 400°F renders more fat and turns the surface golden and crackly.

Important: Use baking powder, not baking soda. Aluminum-free baking powder is a good choice if you are sensitive to a metallic aftertaste.

Extra-crispy chicken wings cooked straight from frozen using a two-temperature air fryer method. No overnight drying and no thawing required.

Ingredients

  • 2 pounds frozen chicken wings
  • 1 tablespoon baking powder, aluminum-free if possible
  • 1 tablespoon oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika

Instructions

  1. First cook: Place the frozen wings directly in the air fryer basket. Air fry at 360°F for 10 minutes.
  2. Drain carefully: Remove the wings. Carefully drain the released liquid and fat, then clean or wipe out the basket as appropriate for your air fryer.
  3. Hack #1 – dry the wings: Pat every wing completely dry with paper towels. Removing the surface moisture is essential for crisp skin.
  4. Season: Toss the wings with the salt, black pepper, garlic powder, onion powder, paprika, and baking powder until evenly coated.
  5. Add oil: Drizzle with 1 tablespoon of oil and toss again to coat.
  6. Hack #2 – crisp at high heat: Return the wings to the air fryer and cook at 400°F for 15-20 minutes.
  7. Shake regularly: Shake or toss the wings every 5 minutes so they brown and crisp evenly.
  8. Check for doneness: The wings should be deeply golden and at least 165°F internally. For more tender wing meat, you can continue cooking until they reach approximately 175-190°F.
  9. Serve: Serve immediately with your favorite dry seasoning or wing sauce.

Tips for Extra-Crispy Frozen Wings

  • Dry every wing thoroughly. Any water left on the surface turns to steam and works against crisping.
  • Use baking powder, never baking soda. Baking soda is much stronger and can create an unpleasant flavor.
  • Do not add the oil first. Coat the dry wings with the seasoning and baking powder, then drizzle in the oil.
  • Shake every five minutes. Frequent tossing exposes different sides to the hot circulating air.
  • Start checking after 15 minutes. Wing size and air fryer strength can change the final cooking time.
  • Sauce at the end. Toss the wings in sauce immediately before serving so they stay as crisp as possible.

The Perfect Sauce for These Wings

These wings are great with a dry rub, but they are even better tossed with a flavorful sauce just before serving. Watch my Best Wing Sauce Ever video for an easy sauce that pairs perfectly with crispy wings.

Frequently Asked Questions

Do I need to thaw chicken wings before air frying?

No. This method starts with fully frozen wings. The first 10-minute cook releases the ice and surface moisture before you season and crisp them.

Why do I need to dry the wings after the first cook?

The wings release water as they thaw. Removing that water and patting the skin dry prevents steam from interfering with browning and crisping.

Can I use baking soda instead of baking powder?

No. Baking soda is much stronger and can leave the wings with an unpleasant flavor. Use baking powder, preferably aluminum-free if you are sensitive to metallic flavors.

How do I know when frozen wings are done?

The wings should be golden and crisp, and the thickest part should reach at least 165°F. Many people prefer wings cooked to a higher internal temperature because the connective tissue becomes more tender.

When should I add wing sauce?

Add sauce after the wings are fully cooked and crisp. Toss them immediately before serving to help preserve the crunchy skin.
