Egg Tortilla Pizza in Air Fryer (10 Minutes, No Oven!)

Crispy, cheesy, and ridiculously easy — this Egg Tortilla Pizza in the Air Fryer is ready in about 10 minutes and you don’t even need an oven. A tortilla crisps up like a pie crust, the eggs bake up fluffy, and fresh mozzarella melts into perfect little pockets. Great for breakfast, lunch, or a late-night snack.

  • 1 large flour tortilla burrito size
  • Cooking spray or oil spray
  • Egg Base
  • 3 large eggs
  • 1 heaping tablespoon mayonnaise
  • Pinch of salt
  • Pinch of black pepper

  2. Pre-crisp the tortilla: Lightly spray both sides of the tortilla with oil. Press it into a round non-stick pan, forming slight edges. Air fry at 400°F (204°C) for 3–4 minutes until lightly crisped.
  3. Make the egg mixture: In a bowl, whisk together eggs, mayonnaise, salt, and black pepper until completely smooth.
  4. Build the pizza: Carefully remove the pan from the air fryer. Pour the egg mixture into the pre-crisped tortilla. Top with the halved fresh mozzarella, then add roasted red peppers, tomato slices, and pepperoni.
  5. Cook: Air fry at 360°F (182°C) for 10–12 minutes, or until the eggs are set and the mozzarella is melted and lightly golden.

  7. Fresh mozzarella gives you better melt pockets and a cleaner flavor than shredded.
  8. If your tomatoes are juicy, pat them dry with a paper towel so the center doesn’t get watery.
