- Preheat air fryer to 380°F (193°C).
- Lightly spray rolls with olive oil and toast for 3–4 minutes. Set aside.
- In a bowl, mix peppers, onions, garlic, salt, pepper, Italian seasoning, balsamic vinegar, and olive oil.
- Add sausage and veggies to air fryer. Cook at 380°F (193°C) for 15 minutes.
- Halfway through, flip sausage, mix veggies, and spray lightly with oil.
- Assemble subs with sausage, veggies, marinara, and cheese.
- Return to air fryer for 2–3 minutes at 380°F (193°C) until cheese melts.
