Bone-in, skin-on chicken thighs seasoned with smoky pantry spices and cooked skin-side down first to render the fat before the final crispy finish.

Ingredients

  • 2 pounds (900 grams) bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 1/2 teaspoon black pepper
  • 1/4 to 1/2 teaspoon cayenne pepper, optional

Instructions

  1. Dry the chicken: Press paper towels firmly against the skin and repeat until no surface moisture remains.
  2. Mix the seasoning: Combine the salt, garlic powder, onion powder, smoked paprika, brown sugar, black pepper, and optional cayenne.
  3. Season: Coat both sides of the chicken thighs evenly with the seasoning mixture.
  4. Add the baking powder: Lightly dust only the skin side with aluminum-free baking powder. Do not create a visible heavy coating.
  5. Rest uncovered: Let the seasoned chicken sit uncovered for 30 minutes.
  6. Preheat: Preheat the air fryer to 380°F/193°C.
  7. Spray: Lightly spray both sides of the chicken with olive oil.
  8. Cook skin-side down: Arrange the thighs in a single layer with space between them. Air fry at 380°F for 12 minutes.
  9. Flip and finish: Turn the thighs skin-side up and cook for another 10-12 minutes, until the thickest part reaches 175-185°F/79-85°C.
  10. Crisp if needed: If the chicken is close to temperature but the skin needs more color, increase the air fryer to 400°F/204°C and cook for up to 2 additional minutes.
  11. Rest: Let the chicken rest for 5 minutes before serving.

  • Be thorough when drying. Surface moisture is the enemy of crisp chicken skin.
  • Use baking powder sparingly. A light dusting on the skin side is enough.
