Why This No-Skewer Method Works
Pressing the seasoned beef into one evenly thick rectangle lets the whole batch cook at the same time. Scoring it before cooking creates kebab-shaped pieces that break apart easily, while leaving the meat together helps it stay juicy.
You may also see this dish spelled kofta kabobs or air fryer kabobs. Kebab is the more traditional English spelling, but the recipe and method are the same.
The most important step: Keep the rectangle evenly thick and check the center with a meat thermometer. Ground beef should reach 160°F/71°C.
Air Fryer Kofta Kebabs Recipe
Juicy, boldly seasoned beef kofta cooked as one scored sheet in the air fryer. No skewers and no flipping required.
Ingredients
For the Kofta Kebabs
- 1 pound ground beef
- 1/4 cup finely chopped onion
- 1/4 cup chopped fresh parsley
- 2 garlic cloves
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon black pepper
- Olive oil spray
- Optional: 1 tablespoon chopped fresh mint
For Serving
- Pita or naan bread
- Chopped tomatoes
- Chopped cucumber
- Chopped red onion
- Fresh dill
- Olive oil
- Salt and black pepper
- Tzatziki sauce
- Crumbled feta cheese
- Fresh parsley for garnish, optional
Instructions
- Preheat: Preheat the air fryer to 400°F/205°C.
- Chop the aromatics: Add the onion, parsley, and garlic to a mini food chopper. Add the optional mint now if using it. Pulse until finely chopped.
- Mix the kofta: Add the chopped mixture to the ground beef along with the salt, cumin, coriander, paprika, oregano, nutmeg, and black pepper. Mix just until everything is evenly combined.
- Press into a rectangle: Place the beef mixture on an air fryer paper liner. Cover it with another liner and press the meat into one large, evenly thick rectangle. Remove the top liner.
- Score and cut: Lightly score the meat in one direction, then cut it into long kebab-shaped strips going the other way without separating the pieces.
- Add the protective liner: Slide a second paper liner underneath the original liner in case the knife cut through it.
- Air fry: Lightly spray the top with oil. Air fry at 400°F/205°C for about 12 minutes without flipping, or until the center reaches 160°F/71°C.
- Make the salad: While the kofta cooks, toss together the tomatoes, cucumber, red onion, olive oil, dill, salt, and black pepper.
- Serve: Break the cooked kofta apart along the cut lines. Serve on warm pita or naan with the cucumber salad, tzatziki, crumbled feta, and optional parsley.
Air fryer liner safety: Never preheat or run the air fryer with a loose, empty paper liner inside. The meat must completely weigh down and secure both liners so they cannot lift into the heating element.
Tips for Juicy, Well-Browned Kofta
- Chop the onion finely. Large pieces can make the meat mixture harder to hold together.
- Do not overmix. Mix only until the herbs and spices are evenly distributed so the kebabs stay tender.
- Keep the thickness even. An evenly pressed rectangle cooks more consistently from edge to center.
- Score without separating. Keeping the pieces together while they cook helps the meat retain moisture.
- Check the temperature. Air fryers vary, so verify that the center reaches 160°F/71°C.
- Give it room. Use a large enough air fryer for the rectangle to lie flat without folding up the sides.
What to Serve with Kofta Kebabs
I served mine on warm naan with chopped tomatoes, cucumber, red onion, dill, olive oil, tzatziki, crumbled feta, and fresh parsley. You could also serve the kebabs over rice, alongside a Greek-style salad, or tucked into pita pockets for an easy handheld dinner.

Frequently Asked Questions
Are kofta kebabs and kofta kabobs the same thing?
Yes. Kebab and kabob are alternate English spellings for the same general style of dish. Kebab is the more widely used spelling, but many people search for air fryer kabobs as well.
Do I need skewers for this recipe?
No. The meat is pressed into one rectangle and cut into strips before cooking. Once cooked, the individual kebabs separate easily along the cut lines.
Do I need to flip the kofta?
No. These kofta kebabs cook at 400°F/205°C for about 12 minutes without flipping.
Why use a second liner underneath?
The second liner catches juices and protects against any spots where the knife may have accidentally cut through the original liner.
Can I prepare the kofta mixture ahead of time?
Yes. Mix the kofta, cover it, and refrigerate it for up to 24 hours. Press and cut it just before air frying.
